Spicy Prawn & chorizo Pasta
Takes 10 mins serves 4
300g spaghetti 120g chorizo pieces 200g raw king prawns 350ml cherry tomato pasta sauce Small handful parsley, chopped 1tsp chilli flakes, if liked
1 Cook the spaghetti according to the pack instructions, then drain and set aside, keeping a little of the starchy cooking water. 2 Meanwhile, fry the chorizo in a large pan until it begins to crisp – there shouldn’t be any need for extra oil. Add the king prawns and fry for 1-2 mins on each side until cooked through. Pour over the tomato pasta sauce plus 150ml water, rinsing out the jar with the water first. 3 Add the drained spaghetti to the pan along with a little of the cooking water to bind the sauce. Add half the parsley and toss until covered with sauce and heated through. Serve scattered with extra parsley and the chilli flakes, if you like more heat.
if you don’t like spicy food, swap the chorizo for bacon bits and some crushed garlic, instead
