50g dark choco­late 1tbsp golden syrup 250g al­mond marzi­pan ic­ing sugar 25g dried cran­ber­ries 25g pis­ta­chios, chopped to dec­o­rate 100g dark choco­late 50g white choco­late

1 Break the choco­late into a bowl and pour over the syrup. Place over a pan of gently sim­mer­ing wa­ter (don’t let the bowl touch the wa­ter). Re­move from the heat. 2 Cut the marzi­pan into three pieces. Dust the work­sur­face with ic­ing sugar and roll out each piece of marzi­pan into a rec­tan­gle about 15 x 10cm wide. Spread each with the melted choco­late and syrup then sprin­kle over most of the cran­ber­ries and pis­ta­chios (save a few for dec­o­ra­tion). Roll up tightly. 3 Melt the dark choco­late in a bowl over a pan of sim­mer­ing wa­ter (don’t let the wa­ter touch the bowl) and re­move from the heat. Re­peat with the white choco­late. 4 Driz­zle the dark choco­late over each log, al­low to set and then driz­zle over the white choco­late. Top with pis­ta­chios and cran­ber­ries.
