50g dark chocolate 1tbsp golden syrup 250g almond marzipan icing sugar 25g dried cranberries 25g pistachios, chopped to decorate 100g dark chocolate 50g white chocolate
1 Break the chocolate into a bowl and pour over the syrup. Place over a pan of gently simmering water (don’t let the bowl touch the water). Remove from the heat. 2 Cut the marzipan into three pieces. Dust the worksurface with icing sugar and roll out each piece of marzipan into a rectangle about 15 x 10cm wide. Spread each with the melted chocolate and syrup then sprinkle over most of the cranberries and pistachios (save a few for decoration). Roll up tightly. 3 Melt the dark chocolate in a bowl over a pan of simmering water (don’t let the water touch the bowl) and remove from the heat. Repeat with the white chocolate. 4 Drizzle the dark chocolate over each log, allow to set and then drizzle over the white chocolate. Top with pistachios and cranberries.
