ROAST Beef & mustard ROLLS
Takes 10min makes 6 60g unsalted butter, softened 1tsp pink or green peppercorns, crushed 2tbsp finely chopped parsley or chives 6 mixed grain or wholemeal rolls, halved 1 Little Gem lettuce 150g sliced topside of beef Mustard and cress Crab apple jelly or chilli jam, to serve
1 in a bowl beat together the butter with the peppercorns, herbs and a pinch of salt, and spread over the rolls.
2 add the lettuce leaves and place the sliced beef on top. Finish with the mustard and cress. Serve with crab apple jelly or chilli jam to spread on the beef. as an alternative to beef, you could use slices of gammon or ham.
