Cover and cook over a medium heat for 10 minutes or until the apples are soft. Mash them a little with a fork, then divide between two bowls. Stir two tablespoons of granola into each bowl and serve with a spoonful of yoghurt or crème fraiche, if you like. Substitute granola for toasted sunflower seeds: pan-fry 4 tablespoons seeds until golden, drizzle with honey and allow to cool
