As soon as the liquid egg has set, add half of the grated courgette, cheddar and spring onion in a line along pancake. Wait another 20 seconds for the pancake to firm up, then carefully roll it using a spatula and your fingers. Be careful not to touch the hot pan! Turn the roll over every 30 seconds to get the outside nice and golden. Serve to your significan­t other, then repeat the process for yourself.
