heat the oven to 200ºC (fan 180°C/ gas mark 6). Heat spinach leaves in a pan over a medium heat until wilted. Transfer to a sieve and press out liquid with back of a spoon. the spring onions to a saucepan with a tablespoon of the olive oil. Fry over a medium heat for two minutes until soft. and rinse chickpeas and add them to the saucepan with the spinach. Stir until combined, then remove from the heat. in the feta, and season with salt and pepper. a teaspoon of olive oil on surface of an oven tray. Lay two sheets of pastry on the tray in a cross formation. Spoon the spinach mixture into the central area where the two pastry sheets cross over. a third sheet on top of the filling, then fold all the layers up over the filling and gently twist and scrunch it all together like the end of a Christmas cracker. Melt butter in microwave and spoon evenly over pastry to give a golden finish. Bake the pie in the lower part of the oven for 15 minutes, then serve.
