Lamb rogan josh

Serves 4, ready in 2 hours

• Low-calorie cooking

spray

• 600g lean lamb leg steaks, all visible fat removed, cut into bite-size chunks

• 4 bay leaves

• 2 cinnamon sticks

• 2 large onions, finely

chopped

• 3 garlic cloves, crushed • 3cm piece fresh root

ginger, peeled and grated • 100g fat-free natural

yogurt, plus extra to serve • Chopped fresh coriander,

to serve

• Boiled dried rice, to serve • Vegetables, to serve

FOR THE ROGAN JOSH PASTE:

• 1 tsp hot chilli powder • 2 tsp sweet smoked

paprika

• 1 tsp garam masala • 2 tbsp curry powder • 4 tbsp tomato purée 1 First combine all the rogan josh paste ingredient­s in a bowl, season lightly and set aside.

2 Spray a large non-stick saucepan with low-calorie cooking spray and place over a high heat. Brown the lamb in batches and set aside. Drain off any fat in the pan.

3 Put the bay leaves, cinnamon sticks and onions in the pan and fry until the onions start to soften – about 5 minutes. Add the garlic and ginger and fry for a further 2 minutes, then add the rogan josh paste and fry for 2 minutes.

4 Return the lamb to the pan with 400ml boiling water, cover and simmer gently for 1½ hours or until the lamb is tender, stirring occasional­ly.

5 Remove from the heat and stir through the yogurt. Drizzle over the extra yogurt, scatter over the coriander and serve with the rice and veg.
