Crispy Asian beetroot rostis

Ingredient­s to serve 4: 6 fresh beetroots, 10 eggs, soy sauce, sesame oil, fresh ginger and coriander, crushed chillies, 2 avocados, juice of 1 lime, olive oil, salt and pepper.
