Spanish tortilla with ham, potato and cheese

MAKES 6-8 wedges Ingredient­s

8 baby new potatoes

2tbsp olive oil

1onion, sliced

1 clove garlic, crushed

4 large eggs

2tbsp milk

25g parmesan cheese, grated 1 tomato, deseeded and sliced into strips

50g ham, chopped

2tbsp basil, chopped

Method

30-40mins

1. Cook the potatoes in boiling salted water for 10-15 mins until tender.

Drain, cool and cut into slices. Preheat the grill.

2. Heat a small omelette pan with a metal handle. Add 1tbsp of oil to the pan, cook the onion for 5 mins until soft. Add the garlic and potatoes and fry for 2-3 mins. Tip into a bowl.

3. Beat the eggs and milk together.

Add the parmesan, potato and onion, ham, tomato and basil.

Lightly season and stir together.

4. Wipe the pan clean with kitchen towel and heat the remaining oil.

Add the egg mixture and fry for about 5 mins until set around the edges and underneath.

5. Transfer the pan to the grill.

Grill for about 5-10 mins until the middle has set and is lightly golden in colour. Leave to cool slightly before slicing into wedges.

Prepare snacks for the week in advance. I cut up lots of fruit and veg on a

Sunday night so I can grab it each morning and add it to my kids’ bags. Things like cucumbers, tomatoes, pepper, grapes and blueberrie­s can all be prepped ahead of time. I also pre-pack little “snack packs” of biscuits or crackers and add these into their school bags as necessary.

Try to get your kids on board with the weekday regime. Give them some sort of incentive to get themselves dressed by a certain time.

Stick to a morning routine. Mine is: get dressed, eat breakfast, play a bit. Then at 8am sharp we start getting shoes on and coats. The kids will quickly learn what happens when, and you’re less likely to come across resistance from them. Less likely, but never say never.

Don’t leave buying school stuff until the last minute. There are lots of special offers over the summer – make the most of them!

Have a weekly or monthly calendar. Mark EVERYTHING on it. Who has PE when, school trips, school shows, project due dates, after school clubs, teacher requests for cereal boxes. Look at this every morning.
