Changing perception­s: from cooking to writing

The man behind the eponymous Restaurant Mark Greenaway in Edinburgh, cooks up his first and lasts

With a career as a chef beginning in Scotland in 1992, Mark then went on to gain valuable experience during a five year stint in Australia, working in some of the country’s top restaurant­s. On his return to Scotland, he worked at various prestigiou­s hotels and restaurant­s including One Devonshire Gardens in Glasgow, before opening his first in 2012, with a second in 2013.

First memory?

Going to a zoo, not sure which one but I definitely remember I was very, very young.

Last resolution?

Was last January 2015 to write my first cookbook and I achieved it.

First job you had?

Commis chef at the Cartland Bridge Hotel in Lanark.

Last time you took a holiday?

We took a working holiday to Singapore in June to cook two banquets to celebrate the Queen’s 90th birthday.

First time you wanted to do the job you’re doing now?

When I was about 14, I thought it would be an easy way to make money. Needless to say I was very wrong – it’s not that easy after all.

Last time you quit a job?

Four and a half years ago, to set up my own restaurant.

First time you dressed up smart?

To go to Sunday school. I think I was about six or seven.

Last fancy dress costume?

It was a bed sheet wrapped around me for a toga party on the Gold Coast of Australia.

First dish you look for on a menu?

As I am a chef I look for a well balanced menu rather than a particular dish.

Last thing you cooked yourself?

It’s my day off so I just had roast lamb with all the trimmings. It was delicious.

First book you loved?

Of Mice and Men. I think it was the first book I couldn’t put down until it was finished.

Last book you read?

My own book to proof read it. Very proud is the only way to describe it.

First car you owned?

It was a Daihatsu Feroza and it broke down pretty much every time I turned the key.

Last car you bought?

A Mini – what’s not to love about a Mini?

First choice to play you in a film?

Ewan McGregor. He is a fellow Scot and in a kitchen environmen­t, I think he would thrive.

Last time you were mistaken for somebody else?

Never happened.

First record you bought?

It was Now 13: I remember Yazz’s The Only Way Is Up was on it.

Last time you sang a song?

Watching YouTube five minutes ago and it was My Way (Robbie Williams’ live version).

First time you spoke in public?

I was doing a cooking demonstrat­ion and I was absolutely terrified.

Last time you made a fool of yourself?

I am constantly making a fool of myself, I just never admit it.
