BLACK BEAN SLOPPY JOES

While a vegan burger in a toasted bread bun is a popular choice, sloppy joes are traditiona­lly American, fun and messy to eat, which all the family will love!

INGREDIENT­S

METHOD

1 tbsp sunflower oil 2 red peppers, finely diced 6 spring onions, roughly chopped 2 tsp soft brown sugar 2 tsp smoked paprika Pinch of ground cinnamon 2 x 400g can black beans, thoroughly drained and rinsed 4 tbsp tomato purée 4 tbsp barbecue sauce (make sure it is vegan) 4 bread buns, split Generous pinch of smoked sea salt 1 avocado, peeled, stoned and sliced Small bunch of rocket

Heat the oil in a pan, add the red pepper and spring onions and cook over a medium-high heat for two to three minutes until the pepper begins to soften. Stir in the brown sugar, smoked paprika and cinnamon and cook for a further minute.

Pour in the black beans, tomato purée and barbecue sauce and simmer for 10 minutes, stirring frequently to avoid sticking.

In the meantime, gently grill or toast the bread buns until lightly toasted. Season the black bean mix with smoked sea salt to taste, then spoon generously into the bread buns. Top with slices of avocado and rocket and serve immediatel­y.
