Two strategies are key to finding the best deals. First, pick an off-peak week. For winter sun, November and the first half of December are very quiet and there are always plenty of late deals available from about three or four weeks ahead of departure. Second, for really low prices, choose a destination with plenty of flights and lots of accommodation – that always puts downwards pressure on prices during quiet times of year. Your best bet is Tenerife or one of the other Canary Islands.
