Big business Making a meal out of fashion and fear

Spiraliser­s are big business, and no wonder. They’ve emerged out of the perfect alignment of the planets Fear and Fashion, in the orbit of Food.

Fashion first. Since Instagram launched in 2010 we have become obsessed with how our food looks. Chefs design dishes to generate interest on the app: never mind the flavour, feel the “likes”. Spiraliser­s are ideal for pretty food.

Now for the Fear, as the tables turned on carbohydra­tes. Those creamy sauces stopped being the enemy, and pasta itself was the bad guy. So what could we put our gluten-anddairy-free bolognese sauce on? Why, a bed of spiralised vegetables, of course. Xanthe Clay
