Why not pop your pigweed for a lovely laddoo?

sir – The Prince of Wales is a wise man; he is right to encourage us to eat amaranth (report, November 6).

This “pigweed” is available in many Indian and Pakistani shops here in Britain, as a leaf vegetable and as a grain. Both are highly nutritious and tasty. I cook the leaves as a vegetable dish, added to dough or to lentils.

In India, where I come from, amaranth seeds are known as chawli. I often pop them in a hot wok, much like popcorn, and eat them as cereal, in hot milk. The popped seeds are also used to make many Indian sweets, such as laddoos and barfis.

There must be recipes from other countries where it is popular. Mamta Gupta
