Zest is best

SIR – Lemon and lime slices, frozen or not, are an abominatio­n in a G&T, masking the flavour of the gin (Letters, December 8).

For the best G&T you’ve tasted, cut an extremely thin length of the peel of a lemon (US: zest), using a very sharp knife, and drop it in the gin before adding the tonic. This releases the flavour of the essential oils.

The method can also be used with limes, generally less successful­ly if only because of their small size.
