The way to wobble BBC Good Food Japanese pancakes

150g SR flour 1/2 tsp baking powder 2 tbsp golden caster sugar 2 eggs 1 tbsp vegetable oil 180ml milk Dash vanilla extract Spray of oil for cooking Topping

Method

Sift flour and baking powder into bowl. Add sugar. Make a well in centre and add oil and eggs. Stir into flour then gradually add milk and whisk (or blitz in a blender). Stir in vanilla. Put a non-stick pan over a low heat and put crumpet rings (about 3.5cm high) in the pan. Fill the rings no more than 3/4 full with batter. Cover pan and cook for 10 minutes. Lift rings on to lid, invert pan over them, then turn whole thing over. Cook for further 1-2 minutes.
