In Malaysia a rendang curry is made of meat slow-cooked in coconut milk and spices to create a luxurious dish that comprises soft meat covered in a rich sauce. However, in Indonesia “rendang” refers to a very different method of cooking meat which results in a liquid-free, crispy finish. The ingredient­s are churned in a pot or frying pan, on a small fire, until all of the liquids evaporate and the meat is well done. The finished effect will not be seen until it has been cooked for many hours. Once crispy, the meat is often eaten with steamed rice and condiments. Katie Morley
