Greener meat
SIR – As a sheep farmer I applaud Michael Gove for encouraging supermarkets to stock more lamb sandwiches (“Gove calls for fewer chicken sandwiches in supermarkets”, report, May 26). He does, however, miss the reason why chicken dominates our supermarket shelves.
British sheep farmers rear their flocks outdoors on grass. While this system is environmentally sound and delivers high animal welfare, it is expensive. Intensive factory-farmed poultry, by contrast, are cheap to produce.
Instead of suggesting supermarkets change their sandwiches, Mr Gove should encourage people to add lamb to their shopping basket once a week for a healthy, sustainable meat option. Sarah Hughes
