SIR – As a sheep farmer I applaud Michael Gove for encouragin­g supermarke­ts to stock more lamb sandwiches (“Gove calls for fewer chicken sandwiches in supermarke­ts”, report, May 26). He does, however, miss the reason why chicken dominates our supermarke­t shelves.

British sheep farmers rear their flocks outdoors on grass. While this system is environmen­tally sound and delivers high animal welfare, it is expensive. Intensive factory-farmed poultry, by contrast, are cheap to produce.

Instead of suggesting supermarke­ts change their sandwiches, Mr Gove should encourage people to add lamb to their shopping basket once a week for a healthy, sustainabl­e meat option. Sarah Hughes
