QI was given some plums last year, more due this year; apparently they are
Bullace and make a good hip-flask filler. Is that correct and, if so, how do I make such a brew?
SW, Kent Bullace is a relation of the damson and both make a very good drink when steeped in gin or vodka. For Bullace Vodka, wash 450g of healthy-looking Bullace; prick each one several times with a fork or place in the freezer over night so the skins will split as thwey dheefreoszte.polafcetthheeprmickoend fruit in a large Kilner jar, add 170g of white, granulated sugar and top up to the rim with 750cl of vodka. Shake the jar daily until the sugar has dissolved then store in a dark place for a minimum of three months and up to a maximum of 10 months. Strain the mixture through a jelly bag and bottle. Ideally, don’t leave the fruit for more than 12 months as it can ruin the mixture.
