THE NAME GAME
I read that there’s been a 70% reduction in illegal songbird trapping at a British military base in Cyprus, due to the use of thermal image drones. Blackcaps, the report says, sell for up to £65 per dozen. A fiver each for a bird weighing 21g. What must that come down to in an oven-ready state, 10g? Perhaps if stylish restaurants were to rename their dishes of pheasant and partridge Ambelopoulia a-la Cyprussori, or some such nonsensical name, we might see UK game dealers being able to afford to pay prices reflecting the true cost of English game.
