Turkey fake duck
The ingredients are short and sweet for this simple but wow recipe. Serve wrapped in Chinese pancakes - buy them in Waitrose, or an oriental store if you have one locally. Or you could just eat the turkey/ duck on its own. It’s also great in an oriental-style salad. Serves: 4–6
INGREDIENTS:
2 turkey drumsticks 1 jar of hoisin sauce
To serve:
Chinese pancakes Cucumber Spring onions Plum sauce
METHOD:
Put your drumsticks in a large saucepan and cover with water.
Bring to the boil, then turn down the heat. Put a lid on the pan and simmer for two and a half hours, until the meat is falling off the bones.
Preheat the oven to 200°C/ fan 180°C.
Remove from the pan, and flake all the meat from the bones, discarding the skin and bones.
Spread the flaked meat out on a baking sheet or roasting tray and pour over the jar of sauce, toss it to coat the meat well.
Put into the oven for about 30-40 minutes, turning occasionally, so the meat become crispy.
Serve with pancakes, cucumber and spring onions cut into thin strips, or with rice or noodles and steamed pak choi. Anne Shooter is the author of Sesame Spice — Baking from the East End to the Middle East, Headline
