1 tsp sodium bi­car­bon­ate ½ tsp sea salt

100g brown sugar

50g sugar

150g but­ter

Choco­late mousse:

160ml milk

3 ½ tbsp sugar

3 egg yolks

200g dark choco­late 250ml whip­ping cream

Dec­o­ra­tion:

Ed­i­ble flow­ers, sprouts, fresh herbs
