Fill the bottom layer with coals and burn until they have a thin layer of white ash on top. Then throw on chunks of smoking wood, fill the next layer with water, slip the ribs on top and put the lid on. Although flimsy, the heat control (via vents) was effective, holding a constant temperatur­e. The end result had an excellent texture, although the smoke flavour was too mild. Decently priced and effective. SMOKE RATING
