RECENT studies suggest that eating cheese could improve health by increasing our levels of ‘good’ high-density lipoprotein (HDL) cholesterol. This dish features all your five-a-day, is full of flavour and the grated, baked cheese on top is guilt-free.
Rich Vegetable Bake
Serves 4
Glug of extra virgin olive oil
2 cloves garlic, crushed
400g can chopped tomatoes
Small bunch oregano leaves, chopped
Large pinch chilli flakes
1 small aubergine, sliced
1 courgette, sliced
4 shallots, finely chopped
1 red pepper, sliced Slurp of Worcester sauce
Sprinkling smoked paprika Bunch basil, torn
150g hard mature cheddar cheese, grated
Green salad to serve
Heat olive oil, shallots, garlic, chilli flakes and chopped oregano for 2-3 minutes.
Add peppers, aubergine and courgette.
Add Worcester sauce and smoked paprika.
Mix and cook for 6-8 minutes until veg caramelise.
Add chopped tomatoes.
Cover with the grated cheese and grill for 6-8 minutes until the cheese is bubbling.
