FLOUR-FREE PANCAKES
WITH Shrove Tuesday coming up this week, thoughts may well be turning to stacks of fluffy pancakes.
It can seem like an ordeal, but contrary to popular belief, Pancake Day needn’t be simply a blow-out.
Try these flourless pancakes made with oats and eggs.
They give a hefty dose of fibre, especially the cholesterol-lowering betaglucan type, and protein. Adding yogurt and fresh fruits to serve just makes them more delicious. INGREDIENTS: Makes about eight small pancakes 100g oats 1 medium egg 1 ripe banana A big dash of milk – you are looking to achieve a slightly runny consistency DIRECTIONS: Blitz all of the ingredients together in a food processor until smooth Leave to rest and thicken for about 15 minutes Melt some butter in a pan and spoon in a little mixture at a time.
