Watermelon and courgetti salad, serves 2 This fresh summer salad is free of gluten, wheat, dairy and refined sugar. If you are a fan of king prawns, it goes great with them too. Ingredient­s: 2 courgettes, ¼ of a watermelon, ½ cucumber, 1 tbsp black sesame seeds, 140g white quinoa, cooked, juice and rind of a lemon, ¼ tsp Himalayan salt, 2 tsp olive oil. Optional: Grilled king prawns, 4 per person. Dressing: 2 chillies, 3 limes juiced, zest of 1 lime. 2 tbsp honey, ½ cup oil, ½ cup water. Method: 1. Start by making the dressing. De-seed and remove stalks from the chillies, then add the other ingredient­s to a blender and mix until fully combined. 2. Using a spiraliser, turn the courgette into courgetti ribbons and cut the cucumber into small chunks. 3. Mix the courgetti with the white quinoa, cucumber, lemon juice and rind, Himalayan salt and olive oil. 4. Remove the rind from the watermelon and cut into squares. 5 Mix the watermelon into the courgetti mix and sprinkle the black sesame seeds over the top – topping with prawns if desired.
