Watermelon Iced Tea

6 black teabags

1 small watermelon, sliced in half

3 sprigs fresh mint, plus extra for serving

3 limes, juice only To Garnish: lime slices; mint leaves; watermelon slice.

1 Place the teabags in a large heatproof jug then carefully pour 1 lt (1¾ pt) boiling water over them. Allow them to steep for about 5 to 10 minutes then remove the teabags and let the tea cool down to room temperatur­e.

2 Once cooled, place in the fridge and chill for at least

1 hour.

3 Scoop out the flesh of one half of the watermelon and remove as many seeds as possible. Place the flesh into a blender and blitz until completely juiced. Cut the other half into slices for serving.

4 Pour the watermelon juice through a sieve into a large bowl using a spoon to help pass it all through. Throw away the remaining pulp then add the mint leaves to the watermelon juice and chill it in the fridge for 1 hour.

5 When you’re ready to make the iced tea, mix the watermelon juice into the chilled tea, remove the mint leaves from the mixture then squeeze in the fresh lime juice and stir it all through.

6 Serve with lots of ice in tall glasses and garnish with a few lime slices, fresh mint leaves and a slice of watermelon.
