Cavolo Nero, Noodle and Miso Stir Fry

1 tbs toasted sesame oil
2 carrots, cut into matchsticks, about 300 g (10 oz)
200 g (7 oz) broccoli florets
75 g (2¾ oz) cashew nuts
1 x 200 g pack sliced Cavolo Nero 1 tbs miso paste, about 25 g (1 oz) 1 tbs honey
1 tbs light soy sauce
2 tbs Japanese rice vinegar
200 g (7 oz) thick rice noodles
Heat the oil in a large frying-pan and fry the carrots, broccoli, cashews and Cavolo Nero for 5 minutes.
Blend the miso paste with the honey, soy, vinegar and 2 tablespoons of water and add to the pan. Cover and cook for 5 minutes.
Meanwhile, cook the noodles in boiling water for 5 minutes, drain and divide between 4 bowls, top with the miso stir fry and serve.
