Spinach Hummus with Pittas

Course: Lunch or light main Skill level: easy Serves: 4 Vegan

■ 1 x 260 g pack spinach

■ 1 x 400 g can chickpeas, drained

■ 1 clove garlic

■ 2 tbs tahini

■ 1 lemon, juice only

■ 2 tbs extra virgin olive oil ■ 1 tsp ground cumin

■ Salt and freshly ground black pepper, to taste

■ 1 x pack 6 pittas To Serve: crudités.

1 Place the spinach in a large bowl. Cover with clingfilm and microwave for 2 minutes until just wilted.

2 Place the spinach, chickpeas, garlic, tahini, lemon juice, oil and cumin in a food processor and blitz until smooth. Season to taste.

3 Toast the pittas and cut each into 3 triangles. Serve with the hummus.
