SPAM® Breakfast Hash
Course: breakfast/brunch Skill level: easy Serves: 4
1 tbs vegetable oil
1 x 340 g can or 200 g tub of SPAM® Chopped Pork and Ham, cubed
1 onion, chopped finely 2 large potatoes, peeled and diced
½ red pepper, chopped ½ green pepper, chopped ¼ tsp freshly ground pepper
65 g (2¼ oz) chopped fresh parsley
To Serve: fried egg to top, optional
In a large frying-pan, heat the oil on a medium-high heat and lightly fry the cubed SPAM® Chopped Pork and Ham.
Add the chopped onion and potatoes and stir, cooking until softened.
Add the chopped red and green pepper and stir, warming through.
Stir in the freshly ground pepper and chopped parsley.
Add a fried egg to the top of the mixture, if preferred.
Serve on a warm plate.
