2:30pm

Appreciate the baroque beauty of a real life Game of Thrones set by hiking the sturdy walls, which famously have never been breached in anger.

4pm

The Stradun is the lifeblood thoroughfare that sweeps through the heart of the old town. Take a seat at Café Festival (www.cafefestival.com) and enjoy a bijela kava (milky coffee) as you take Dubrovnik’s pulse.

7pm

Savour the epic tasting menu and views at 360° (www.360dubrovnik.com), which has just snared a Michelin star. The cooking is stellar with the Slavonian black pork a delicious highlight. Superb wine list and service too.

Saturday, 10am

Head out for a half-day with Dubrovnik Boats (www. dubrovnikboats.com). Enjoy the run of your own speedboat as your skipper zooms you off to the Elaphiti Islands and a tour of the best swimming spots.

Midday

The island of Sipan is home to Konoba Kod Marka (tel: 020-758007), a family-run waterside seafood restaurant. Trust their catch of the day and their unusually light bottling of Vrbnicka Zlahtina white wine.

3pm

Arrive back in Dubrovnik and enjoy a cooling drink at Do Do (Ullica od Tabakarije 41), a cafe bar that attracts a local crowd with swings along with barstools.

7pm

Book a table on the terrace at the Excelsior’s Sensus Restaurant and enjoy sweeping old town views as Dalmatia’s superb produce is given a creative twist in their open kitchen.

Sunday, 9am

Stroll around the old town or relax by the best ‘swimming pool’ in Dubrovnik. The Excelsior’s seawater swimming area gazes back to the city’s rugged ramparts.■ Easyjet fly to Dubrovnik (www. easyjet.com) from Edinburgh with returns from £130.48.
