Graze away with Greenaway through a menu of exciting new dishes

One of the Capital’s best known chefs launches dining concept at the Waldorf Astoria Edinburgh

Celebrated Edinburgh chef Mark Greenaway welcomed a select audience to the launch of his brandnew restaurant, Grazing by Mark Greenaway, at the Waldorf Astoria Edinburgh last night.

The popular restaurate­ur announced the closure of his previous venture, Restaurant Mark Greenaway, last year before stating that he would be opening a “more

theatrical” venture in the city centre in 2019.

Following a few cryptic social media posts, the chef and author of the Perception­s cookbook revealed that he would be bringing the laidback ‘grazing’ dining concept – which showcases traditiona­l, modern and sharing plates, incorporat­ing locally-sourced ingredient­s and unique concept dishes – to the brasserie at the five-star hotel, replacing Galvin Brasserie de Luxe.

The interior of the restaurant has recently undergone refurbishm­ent, maintainin­g its informal look and feel, with updated décor featuring a few of Mark’s personal touches.

Guests sampled some of the restaurant’s stand-out dishes including BBQ shiitake mushrooms on toast, cured meat and choux pastry picnic boxes, and fluffy Japanese buttermilk pancakes.

Mark said: “We have been working really hard to get the concept of Grazing just right, and it was rewarding to see it so well received by our guests last night. Many new and familiar faces enjoyed tasters of our new and unique concept dishes and enjoyed ‘grazing’ and mingling at their own pace.”

Accommodat­ing 160 covers, the restaurant will offer private dining and ‘chef ’s table’ experience­s. Mark added: “Reservatio­ns have already opened to the public and we look forward to serving up our tasty dishes in one of Edinburgh’s historic buildings, but within a relaxing environmen­t accessible to all.”

Dale Macphee, general manager at the Waldorf Astoria Edinburgh said: “Mark has injected lots of energy and enthusiasm over the past few weeks. There has been huge excitement across the hotel as staff have watched the new restaurant offering come together. I’m sure Grazing will make its mark very quickly.”

Grazing, on the ground floor of the hotel accessed via Rutland Street, will open to the public this Friday.
