We ask Dovile Newton of new Glasgow cafe, Locker Hyndland, about her foodie likes and dislikes
Cafe owner Dovile answers our questions
What’s your favourite ingredient?
For me, it has to be garlic. It’s a very versatile ingredient and, in my opinion, sometimes understated outside of Italian cooking.
Do you have a guilty food pleasure?
I absolutely love cinnamon buns, especially when they are warm and just out of the oven.
Tell us about your first food memory?
When I was around seven years old, my dad used to wake up earlier than everyone else just to make me crepes. They were my first food love and memory, for sure.
What’s your favourite Scottish restaurant, deli or cafe (apart from your own)?
I have two favourite restaurants,
both in Glasgow. The Gannet on Argyle Street or Spanish Butcher on Miller Street. Hands down, my favourite deli and café is Eusebi. The food scene in Glasgow is so exciting and varied.
What would be your last supper? Red king crab from Norway.
Starter or pudding?
Pudding. I have a sweet tooth and thankfully, our chef, David Hetherington (former Masterchef: The Professionals contestant), is always serving up lovely sweet treats fresh from the bakery at Locker Hyndland.
Do you have any food hates? None at all.
What starters, main and dessert would be served at your dream dinner party and who would you invite?
I would go for scallops to start, followed by a main course of venison and chanterelles, then salted caramel fondant and Guinness ice cream. I don’t think I would have anyone famous to my dinner party. Instead, I’d invite my mum, dad and the whole family.
What's your favourite geographical foodie destination?
Copenhagen. If I travelled there tomorrow I would start my holiday with a trip to Noma, the two Michelin star restaurant run by Rene Redzepi.
What should we order at Locker Hyndland?
Everything on the menu! Or you could go for my personal favourites – the crayfish sandwich or berry compote pancakes.
