Turkey burgers conjure up images of rubbery grey, bland patties that leave you dreaming of a juicy beef quarter pounder. But swapping red meat for this low-fat alternativ­e can cut calories and fat by up to 75 per cent, so I took on the challenge of inventing a turkey burger I actually wanted to eat – and these are a complete wow and will become a family favourite in no time... INGREDIENT­S 1 kg turkey thigh mince 1 white onion, diced 2 cloves garlic, minced 1 tbsp dried parsley 1 tbsp dried chilli 1 tbsp mustard seeds 100g breadcrumb­s Season to taste TO SERVE: Salad, mustard mayonnaise, brioche bun DIRECTIONS Fry the onion and garlic in a frying pan and allow to cool. Add all of the ingredient­s to a bowl and mix well with your hands. Form eight round patties. Fry in a pan for about 10 minutes each side until brown. Frederick Faulkner
