Italian vegetable and egg scramble

● Calorie-controlled cooking spray

● ½ red pepper, chopped

● 100g potatoes, chopped

● 4 cherry tomatoes, sliced

● ½ onion, diced

● 2 eggs, lightly beaten

● Fresh basil, torn, to serve

1 Mist a frying pan with cooking spray and place over medium heat, add chopped vegetables and sauté until browned.

2 Add eggs, season to taste and cook, stirring, until scrambled – for about 2 mins. Top with fresh basil.
