Caprese panini

SERVES 1 Prep 5 mins | Cook 5 mins

● 1 tbsp lighter than light mayonnaise

(we used Hellmann’s)

● 1 x 85g panini roll, split

● 1 tomato, cut into 1cm rounds

● 1 tbsp basil leaves

● 40g light mozzarella, sliced

● Calorie-controlled cooking spray

1 Spread mayonnaise over cut sides of panini roll, then top the base with tomato, basil leaves and mozzarella. Season to taste, then add top of roll and mist all over with cooking spray.

2 Set a large griddle pan over medium-high heat, then add panini roll and cook for 2-3 mins on each side, pressing down with a spatula, until mozzarella is melting and roll is golden. Season to taste and serve immediatel­y.
