Roast broccoli & quinoa
A CRUNCHY, PIQUANTE SALAD DISH
Serves 6
270g quinoa 2 broccoli heads 150g feta 2 tbsp capers 3 tbsp pine nuts 2 tbsp olive oil
1 In a pan, bring quinoa and 750ml water to the boil, reduce the heat and simmer for 15 mins, then drain.
2 Preheat oven to 220C/Fan 200C/ 425F. Cut the broccoli into small pieces, drizzle with oil and roast for 15 mins. On another baking sheet, drizzle oil on the quinoa and roast for 15 mins.
3 Cut feta into small cubes. Mix with pine nuts, capers and broccoli. Place quinoa on a serving dish and top with the broccoli mix. Serve warm.
