Crushed new potatoes with spring onions & mint
ENJOY THE NEW CROP, SERVED MINT- FLECKED AND BUTTERY
Serves 4–6
1kg new potatoes, scrubbed, skin on, halved 3 tbsp olive oil 3 spring onions, sliced Sprigs of mint, to garnish
1 In a large pan, boil the potatoes for 15–20 mins (or until tender). Drain thoroughly and return to the pan; crush but don’t mash the potatoes, until the edges are broken and fluffy.
2 Add the olive oil and spring onions, and season with salt and pepper. Stir to coat evenly and serve garnished with sprigs of mint. (These can be served warm or cold.) »
