Cucumber & mint gin
1 large cucumber 2–3 sprigs of mint 700ml gin
Peel the cucumber, slice lengthways and scoop out the seeds. Cut into cubes and place in a jar along with the mint and gin. Steep for up to 24 hours in a cool dark place before straining and bottling.
for a green gimlet
In a mixing glass, add 50ml of your infused gin, 10ml lime cordial and plenty of ice. Stir, then strain into a chilled martini glass, and decorate with slices of cucumber, lime and sprigs of mint.
