Raspberry, bee pollen and honey natural yogurt lollies

Not only does the bee pollen add a nice crunch to these creamy lollies, but if you use local honey and bee pollen, they can help alleviate hayfever symptoms, too.

Makes 6

100g fresh raspberrie­s 10g fresh mint leaves, torn 450g natural yogurt 2 tbsp honey

2 tsp bee pollen

1 Blend the raspberrie­s and mint leaves in a food processor or using a hand held blender.

2 Add the natural yogurt and honey and blend until smooth, then sprinkle in the bee pollen.

3 Gently pour the mix into the lolly moulds, tap them to make sure the mixture gets into the bottom of the mould and there are no bubbles. Leave to freeze overnight.
