HEALTHY CHICKEN CHOW MEIN

We are forever being told to eat more healthily – but sometimes we all lack inspiratio­n on what to cook which is tasty, healthy and easy to make. After all, no one wants to live on salad.

Eat Better Feel Better is a Scottish Government campaign, encouragin­g us all to...well, to eat better and feel better.

You’ll need:

● 2 medium onions

● 2 garlic cloves

● 4 spring onions

● 1 red pepper

● ½ pack pak choi

● 2 medium carrots

● 4 small chicken breasts

● ½ tsp ground ginger

● 2 packs straight to wok noodles ● 4 tsp reduced salt soy sauce

Method:

1. Peel and chop the onions and garlic.

2. Wash and slice the spring onions.

3. Wash, de-seed and thinly slice the pepper. 4. Shred the pak choi.

5. Wash, peel and thinly slice the carrots.

6. Heat 1 tbsp of vegetable oil in a large frying pan or wok.

7. Stir fry the chicken, onion and garlic until golden brown.

8. Reduce the heat and add the rest of the vegetables and ground ginger. Stir fry until the vegetables are soft and the chicken is cooked. 9. Add the noodles to the pan and stir fry for 1-2 minutes, separating the noodles with a fork until they are heated through.

10. Add soy sauce to taste and serve.
