Gnocchi is a great standby to have in your fridge for when you need a quick meal and can’t be bothered with too much effort in the kitchen. It cooks really quickly and goes with lots of different sauces. This recipe for gnocchi with pork, spinach, peppers and tomato will become one of your new midweek favourites. Thanks to Aldi for this week’s dish.

You’ll need:

400g pack Specially Selected British Pork Sausages

1 red pepper

1 beef tomato

1 tsp Specially Selected British Rapeseed Oil 150g baby spinach

1 tsp crushed chillies

1 250g pack gnocchi

5g fresh basil

Method:

1. Cut along each sausage and break up into bite-sized pieces.

2. Cut the pepper in half, remove any pith or seeds and chop into chunks.

3. Cut the tomato into 8 pieces.

4. In a large frying pan or wok heat the oil. 5. Add the sausage pieces and sauté for a couple of minutes.

6. Add the chopped red pepper and cook for another 5 minutes, stirring occasional­ly.

7. Add the tomato chunks and cook for another 4 minutes.

8. Add the spinach and cook until wilted. Sprinkle over the crushed chillies and season with some black pepper.

9. Cook the gnocchi in some boiling salted water, following the instructio­ns on the pack.

10. Serve the drained gnocchi with the sausage and toss together, then garnish with basil.
