Rising Tides
You’ll need: 60ml Old Pulteney 12 Years Old, 10ml lemon juice, 10ml lime juice, 15ml jasmine & green tea syrup, 2 drops saltwater solution (1:5 salt to water), soda water
Steep 100ml of green & jasmine tea, add 125g sugar and cook on a high heat. Simmer the syrup for 15 minutes before cooling. To a glass, add lemon, lime, Old Pulteney, syrup and saltwater solution. Add ice. Top with soda, garnish with burnt sprig of rosemary.
