- ESTELA BY IGNACIO MATTOS OTTOLENGHI SIMPLE BY YOTAM OTTOLENGHI

LARTISAN, £26.87

Estela is one of my favourite new York restaurants, and this book – praise be – contains recipes for many of its signature dishes. Even though they’ve been dreamt up by a chef there’s nothing complicated about lamb ribs with chermoula and honey, or charred cucumber with ricotta and basil. Chef Ignacio Mattos, originally from Venezuela, pulls in ideas from all over the world then applies his own sensibility. The flavour combinations, though simple, can startle. If your cooking is in a rut this will definitely shake it up.

This is chef Connor Reed’s recipe from the harvest supper. He used huge, delectable pork cheeks, which you can buy direct from pipersfarm.co.uk, smoking them first for more autumnal flavour, but I have adapted the recipe for easier-to-find pork belly. The bean and artichoke mix is good on its own, too, warm or at room temperature as a winter salad.

ADR DEEPTI SHARMA A “hunger strike”, more commonly known as anorexia, is a symptom, not a disease. It may be due to anything from a medical condition to his environment.

As reptiles are coldblooded, husbandry plays a vital role in their happiness. This refers to everything from his enclosure’s temperature, lighting, diet and time of feeding, humidity, size and location of enclosure.

Temperature is the biggest factor when it comes to eating. The daytime temperature should be between 77-86F (25-30C), and the night-time temperature should be between 64-73F (18-23C). Chameleons also require at least 12 hours of UVB spectrum lighting a day and a water-drop system, as they will only drink water droplets. Make sure he is being fed the right things; true chameleons are carnivores. Perhaps research where Cornelius would have lived in the wild so that you can mimic this as much as possible at home.

To be safe though, maybe take Cornelius on a little visit to the veterinarian.

family. Although Mediterranean spur-thighed tortoises can live well beyond 50, he is ageing and may be undergoing some physical changes. Sudden deviations in an animal’s behaviour are always a cause for concern, and pain and medical problems can lower the threshold for aggression. Therefore, I would certainly advise a check-over with your vet.

It is possible that, unbeknown to you, one of the cats has frightened or worried him and so he now has a negative association with them. Try to prevent the cats from entering the garden or, when he is unsupervised, keep him in an environmentally enriched enclosure so that cats won’t bother him.

motoring garden party in the world; 120,000 people attend the day I visit. Vehicles and motorbikes of all types screech and howl past on the hillclimb course set in the Duke of Richmond’s estate. A man sails overhead wearing a jet pack. Yet most striking is the progress made early in the automotive industry, evidenced here. A Bentley Jackson Special clocked 135mph – 80 years ago.

The 2003 Azure can do 150mph, but sailing on to the coast between tall hedges and bright cornfields, I want to slow everything down to savour each moment of this experience. Not far from Goodwood, the Millstream Hotel and Restaurant at Bosham is a delightful historic property, once a group of fishermen’s cottages dating from the 17th century. It greets with a pleasing seaside salt smell.

“Bosham is part of the larger Chichester Harbour, designated an Area of Outstanding Natural Beauty,” explains manager Tom Sherlock, formerly a policeman in south London. “It’s the perfect place for families to visit with its little cafés and arts-and-craft centre, while bird watchers, nature lovers and walkers will be well entertained here.”

The next morning the weather is Mediterranean as I make my way into Dorset and seek out Langham Wine Estate. Certainly on a day like this, it is the equal of any trip to Champagne or a Provençal winery. A circular stroll from the National Trust through farmland, returning via the South West Coast Path. Start at Cogden car park, postcode DT6 4RL, grid ref SY503886.

From the middle of the car park, head east through the kissing gate and continue for approximately half a mile (800m) through another three gates. To your left you should now see the gate to Othona (private).

In front of you the track forks – take the right-hand track through the field and through another gate to find yourself crossing the bottom of a steep field.

Go through another gate into a field where you will see anthills to your left. Follow the path around the patches of scrub and through another gate.

You will find yourself at the top of three fields sloping down to the sea. Follow the path through two more gates and you will find yourself on the South West Coast Path.

Turn right (westwards) and follow the coast path until you pass a patch of willow trees using the boardwalk over the mud. Continue along the coast path through fields and between hedges until you emerge near the beach.

Take the track leading up the hill through two more gates back to the car park.
