Pipers Farm’s free-range bronze turkeys are hatched in April, and reared in Devon on small family farms, feeding on cereals, grass, nettles, fodder beet and cider apples. They are at least seven months old when they are “dispatched”, dry-plucked by hand, and hung for 12 days, before delivery in recyclable wool and cardboard packaging.

KELLYS

Paul Kelly is the turkey king, third generation of the family with its own breed of turkey, the KellyBronz­e. Kellys is one of the few farms with its own turkey “hens” laying eggs (most farms buy in chicks) meaning it controls the entire cycle. The slow-growing birds are dry plucked and hung for at least seven days. Do follow Paul’s cooking instructio­ns, which give a notably shorter cooking time than most recipes, and produce a supremely juicy bird. Kellys also sells an extra-small turkey (£41.44 for 2kg) which is perfect for small families who want a whole bird, but don’t want to be eating it for days.

COPAS

Bronze turkeys raised on the Copas family farm in the Berkshire countrysid­e that inspired The Wind in the Willows, and guarded by a posse of 10 alpacas as well as Border collies. The birds are five to seven months old, dry-plucked and hung for two weeks.
