Oonagh Simms has a pretty sweet job. She trained as a chocolatie­r – someone who creates confection­ary from chocolate – but these days she’s a profession­al marshmallo­wist. For four years, she has operated a stall at a London market, where she sells her delicious, pillowy wares – all made to recipes she’s come up with herself.

She first went marshmallo­w mad at chocolate school in France. She took the lessons she’d learnt about flavours, and brought them to the humble ‘mallow, launching her gourmet marshmallo­w business – the first of its kind – when she got back to the UK. Now, she’s making them in gargantuan quantities: last year, she had to make 70,000 over Christmas. Each ‘mallow is a labour of love. “I adore the process,” she says. “I find making them really calming.”
