Master of marshmallows
Oonagh Simms has a pretty sweet job. She trained as a chocolatier – someone who creates confectionary from chocolate – but these days she’s a professional marshmallowist. For four years, she has operated a stall at a London market, where she sells her delicious, pillowy wares – all made to recipes she’s come up with herself.
She first went marshmallow mad at chocolate school in France. She took the lessons she’d learnt about flavours, and brought them to the humble ‘mallow, launching her gourmet marshmallow business – the first of its kind – when she got back to the UK. Now, she’s making them in gargantuan quantities: last year, she had to make 70,000 over Christmas. Each ‘mallow is a labour of love. “I adore the process,” she says. “I find making them really calming.”
