Make choco­late sand­wich cook­ies

Pre­heat the oven to 180°C/160°C (fan)/gas mark 4. Lightly grease a bak­ing tray with but­ter and line it with parch­ment pa­per. Mix the but­ter, sugar and 140g of choco­late spread to­gether in a large bowl us­ing the hand mixer. Beat in flour and co­coa pow­der. Add egg and beat again un­til the mix­ture is smooth. Leave to chill in the fridge for 20 min­utes. Di­vide the dough into 20 even-sized pieces, roll each piece into a ball and flat­ten the balls into discs with the palm of your hand. Put one tea­spoon of choco­late spread in the mid­dle of half the discs and put the other 10 discs on top, to make them into sand­wiches. Gen­tly pinch the edges of the sand­wiches to en­sure that the spread is sealed in­side and won’t spill out. Lay the sand­wiches on a bak­ing tray. Leave plenty of space be­tween each one. You may need two bak­ing trays. Bake for 12–15 min­utes, or un­til the sand­wiches are firm around the edges and set in the mid­dle.
