While many foods were scarce, carrots were one vegetable that was in plentiful supply. So abundant, in fact, that it was often enlisted as a substitute for other ingredient­s, such as the toffee carrot pictured opposite, or in potato and carrot pancakes, for instance. The government encouraged carrot consumptio­n by suggesting that the RAF’s success at night-time raids was down to its pilots eating highcarote­ne carrots. The result was that people ate more, thinking they’d see better in the blackout.
