The potent combinatio­n of mod Danish cuisine and design makes even the most casual gastro outing in Copenhagen such a pleasure. Design firm Space Copenhagen didn’t miss a trick when it furnished a former oil warehouse in the historic Christians­havn quarter for René Redzepi’s new 108 restaurant. Light floods through tall windows into the high-ceilinged space, providing relief from raw concrete, exposed brick, dark burnished metals and weathered timber. In the kitchen, Noma alum Kristian Baumann blends his Korean heritage with Danish sensibilit­ies, creating picture-perfect plates with ingredient­s such as preserved berries, flowers, fermented pumpkin seeds and squid guts.
