1½ tbs crème fraîche 1½ tbs mayonnaise squeeze of lemon juice ½ tbs chopped fresh dill, plus whole sprigs to garnish 220g cooked peeled prawns 2 slices bread 1 tbs butter 1 tbs salmon caviar

Mix together the crème fraîche, mayonnaise and lemon, and season, then stir in the dill and prawns. Toast the bread, then butter while hot. Spoon the prawns onto the bread. Garnish with caviar and dill, and serve with other open sandwiches, such as smoked salmon and pickled cucumber, and herring, red onion, sour cream and boiled egg.
